We roast Piedmont hazelnuts at low heat until their oils bloom, then wrap each one in a pillow of Medjool date and hazelnut butter praline. The truffle is hand-dipped in 45% milk chocolate and rolled in fine hazelnut dust. No palm oil, no lecithin, no glucose syrup. Each truffle is placed in a gold-foil cup and boxed in sets of nine. If Ferrero Rocher grew up and learned to cook — this is what it would taste like.
